SEAFOOD

Despite the stereotypes, eating in Texas is not just about beef.

Seafood restaurants flourish locally in myriad styles and pricing tiers. Affordable oyster bars typically offer that Gulf Coast specialty as well as fried fish and shellfish, bowl-size shrimp cocktails and, in season, crawfish. At the opposite end of the spectrum, fine-dining seafood destinations distinguish themselves by offering prized and unusual delicacies and preparing them with respectful restraint.

After eating their way through the breadth of options, our critics chose eight restaurants diverse not only in approach but also in age. Three have been in operation since the '70s, and two opened in the last year.
